New restaurant on ITS Campus
The Institute of Tourism Studies opened its doors to another restaurant, ‘The Vaults’ in St George’s Bay, St Julians. The Vaults is located in the cellars of the Institute’s building and has been refurbished to a rustic décor.
The restaurant has an open kitchen concept offering a fusion of Mediterranean, Asian and Far Eastern Cuisine. The menu being served is a la Carte’ with all dishes being freshly cooked to order and meticulously prepared by advance level students assisted by the lecturers, Jesmond Atkins and James Attard in the kitchen.
The service will be provided by intermediate level of students under the guidance of lecturer Claude Scicluna. The style of service will be a mixture of modern and classical plated service, as well as gueridon dishes such as the preparation and cooking of: pasta, meat carving and filleting of fish. Apart from the elaborate menu, some specialties will also be served occasionally in this restaurant. The Vaults will be open only for dinners on Thursdays and Fridays.
Adrian Mamo, the Executive Director of ITS said, ‘This is another important step for the Institution of Tourism Studies aimed at giving our students following a career in the Hospitality sector, a broader and higher standard of exposure and training in food preparation and beverage service’.
